Just a quick one today folks – a healthified version of an old favourite.
Meanwhile, I love when I post pictures of these on Instagram, and people be all ‘what’s a pikelet?’
Let’s just say little pancake and be done with explaining! Just like all our other pikelets around here, we eat ’em plain so these blueberry buckwheat pikelets are juiced up with a whole bunch of lovely blueberries. If it’s not sweet enough for you, splash in a little maple syrup. You’ll be glad you did!
A super easy, super-fast, super gluten-free goodie for morning or afternoon tea. They don’t rise as much as my signature pikelets, owing to the spelt, but they’re fluffy enough and taste great. Get stuck in!

Description
Super light and fluffy health bombs!
Ingredients
- 1 cup buckwheat flour
- 1 tablespoon baking powder
- 1/2 cup blueberries
- 1/4 cup coconut sugar
- 1 pinch salt
- 1 large egg
- 3/4 cups milk
Instructions
- Mix dry ingredients together, then add milk and egg and stir to combine.
- Drop 1/4 cupful in a greased frying pan over medium heat. When golden-brown on the underside and beginning to set on top, flip for another few minutes until cooked through.
Notes
The batter will be even better if you leave it to sit for about 30 minutes before frying.
1/4 of a teaspoon of bicarb would be a great addition if you have it.

You’ve combined two of my fave foods- piklets & blueberries ( just look at my Pinterest board, toooo many blueberry recipes!). I’ve never heard of coconut sugar but coconut stuff is everywhere isn’t it?! Flour, oil, water & now sugar. I’ve tried the flour ( fail ) but none of the others. Is it a bandwagon I need to jump on?

Yes. Coconut sugar and oil are amazing. Also, mix the two together and you’ve got an awesome exfoliant for your face/body. Rub it in, then jump in the shower and wash it off.

coconut sugar is pretty rad – a low GI natural sweetener that hasn’t been refined, so it retains all nutrients. As a bonus, it kinda tastes like toffee or caramel! I’m a bit obsessed.
coconut oil I think is pretty cool too, but in moderation.
Coconut flour is difficult to work with if you’re not aware of how it works – it needs a whole lot more moisture, so cannot be subbed in for regular flour. It’s a nice gluten-free option, but takes some effort.
coconut water is rad but I think it tastes pretty awful – I get the coconut water powder from loving earth and put it in my smoothies.
As far as other bandwagons… I’m not even gonna go near those! For serious.

I might sound dumb but is coconut oil a fat like other oils? Is it better for you?
I’ve recently had some ” raw” foods ( cheesecake & pizza- yum! Never thought I’d say that but they totally were & now I’m a bit obsessed with trying to recreate them) & the cakes & cheesecakes have a fair bit of cocnut oil in them. So many sites are sprouting how healthy these foods are for you but surely sweeteners are sweeteners whether they be sugar or agave & fars are fats whether they are butter or coconut oil? I sound ignorant don’t I ? I try to be healthy but I’m really all about the taste so if it taste good & is healthy for me bonus!
As for bandwagons…..I usually jump on & them promptly fall/jump off lol clearly I’m not made for wagon riding

Dude – you’ve actually very astutely hit the nail on the head right there! Sweeteners are sweeteners (though there are levels of goodness) and fats are fats (although there are different sorts that do different things) and therefore should be used in moderation, and with common sense.

Awesome & thank you for being so bloody helpful! It just reiterated what I already thought- that all those raw food/paleo/no-sugar diets are a crock of shit. I’ve never been one to cut out whole food groups from my diet because, der, I love food! I think I’ll just keep being sensible with my food choices & eat stuff I like ( even if it is a raw pizza because that stuff was gooood!), cook from scratch & enjoy food because it tatse so damn good not because its spruiked as the newest thing that will save my life/make me skinny/is a super food. Lets be honest, isn’t all food SUPER?! I mean shit, even unhealthy food has it’s time & place in my life- McChicken & coke I’m looking at you!

Haha both my husband and I use that same term to describe those diets too! Although the people who ascribe to them are very passionate about it. I personally don’t think it’s sustainable, or… normal? Accessible? I don’t know. Am halfway through a post about my food philosophy and it’s very much like yours. Whole foods, not much processed stuff, read things with an open mind and critical eye. And drink coke sometimes if you want!

To call anyones’ diet a ” crock of shot” is ignorant , rude and plain ignorant. Different diets suit different needs , we are all unique, Paleo is great for some people especially short term and good for working out allergies. No good for me being a vegetarian although it is still possible. Please stop being so judgemental of other peoples needs and choices, Thank you,

FRESH coconut water is actually delicious. But FRESH is the operative word. In the Caribbean/Africa/South America/Asis people just crack them open and drink them straight from the nut and it is the best. All the hype about it is true too (bandwagon jumping aside)- sterile (if straight from the nut), fully of electrolytes, more hydrating than water. If you had nothing but coconuts on a desert island, you’d be fine. HOWEVER all that is pretty much null and void once you stick it in a bottle/carton/can and fill it with preservatives, sweeteners and artificial flavours.
