Friday is Pizza Day at VMHQ, partly because of this song, and partly because EVERYONE EATS IT WITHOUT COMPLAINT.
Over the years I’ve tried many pizza dough recipes and to be honest, most of them work really well. I’ve tried honey wholewheat (two thumbs up), this one from The Beetleshack, Pippa Middleton’s recipe, just about every one I could find. I’ve settled on Jamie Oliver’s recipe from The Naked Chef, (this one is very similar) one basic bread recipe from which you can create all sorts of things, and it’s a huge recipe that makes four pizzas and a bit left over for these breadsticks, so more than enough for all of us.
Sometimes I make foccacia with the leftover dough, sometimes calzone, mini pizzas… whatever we feel like at the time really. But the kids are big fans of breadsticks so while I was trawling the pantry looking for a way to jazz them up, I threw on some dukkah and then realised honey would also be a perfect match.
Seriously, you just roll out the dough into a fairly thin rectangle, slice it with a sharp knife into long strips, transfer the strips to a baking tray without them sticking together, and swearing when they do, sprinkle over your dukkah and honey and a big pinch of salt flakes, and bung them in the oven at 200C for about 10-15 minutes.
They don’t take long at all and are prone to burning in such a hot oven, so do keep an eye on them and take them out when they’ve turned crispy and golden.
We like them with dip or in lunchboxes, or even just plain with a glass of wine as you’re waiting for your pizza.

What to do with leftover pizza dough? Why, make breadsticks, of course!
Ingredients
- 7g dried yeast
- 170ml warm water
- 250g plain white flour
- 1 tablespoon honey
- 1/4 teaspoon salt
- 1 tablespoon olive oil
Instructions
- In a large bowl (I use my stand mixer and occasionally my breadmaker) combine the water, yeast and honey. Leave 10 minutes until it begins to go frothy.
- Add the flour and salt and mix. Knead this on a floured surface for 10 minutes until you have a soft but springy dough (it will be kind of sticky at first but hang in there!). Use the dough hook on your stand mixer if you have it and knead on low for 10 minutes.
- Leave in an oiled bowl in a warm place with a plastic bag or cling wrap or something over it until doubled in size, about an hour I leave mine.
- Punch the dough down and turn it out onto a floured surface. Break the dough up into balls (easier to roll!) and roll fairly thin into long rectangles.
- Cut widthways into thin strips and place on a baking tray. Drizzle with olive oil and honey, and sprinkle over dukkah and flaked sea salt.
- Bake at 200C 10-15 minutes until golden and crisp on the outside but still chewy in the middle.

These would go down a treat in our house hold. We are big fans of the Always Fresh Three Seed and Sea Salt Grissini {fancy Italian word for breadsticks – which means we are probably paying way too much for them}. I think I’ll be whipping these up shortly with sesame seeds, poppy seeds and linseeds.
