There is, in my humble opinion, a huge and delicious difference between boiled corn and grilled corn. And this is coming from someone who will eat corn in any forms, any time, any where. Who, when reading about nutritional advice and diet descriptions will hurl the book in disgust if they advise eliminating corn from the diet. No way, man. Corn is my homie. Corn in its natural state is one of the joys of life, even if it does get stuck in my teeth.
I have grilled corn both on an indoor grill pan and out on the barbecue, and while both are great, the barbecue is that much better. Especially this time of year when it’s a tad hot to be slaving over the stove, or putting it in the oven. You can either soak the husks and cook them like that (if you don’t soak, they will catch on fire over the open flame; and it also helps with steaming), or you can peel the husks and silk and wrap them in foil. Some people also put seasonings in the foil but I’m a bit lazy and just whack them on and deal with it later. You can also just throw the husked cob straight over the open flame, which is totally my favourite.
Mexican influences on meals, especially the fresh salsas and crisp veggies, are one of my strongest in summer. It’s so easy to throw together some burritos, tostadas, tacos or whatever’s going with everyone helping themselves and minimal worrying. I love fresh chilli, coriander and lime, and crave them when the heat hits. The ripe tomato, the sweet corn and the crunchy onion in this salsa make me a happy woman indeed.
I made this recipe with one ear of corn, peeled and covered in foil, and grilled on the open grill side of the barbecue over the direct flame for about 20 minutes, turning occasionally.
Roasted corn salsa
Ingredients
- 1 ear of corn, roasted
- 1 Small red onion, chopped
- 2 cloves garlic, minced
- 1 bunch coriander
- 1 lime, juiced
- 1 fresh chilli, chopped (deseeded for less heat)
- 2 Large ripe red tomatoes, diced, or 1 punnet cherry tomatoes, halved
- salt and pepper
- 1 pinch cumin

Cut the kernels off the ear of corn once it has cooled somewhat. Mix in a bowl with all the other ingredients, tasting to ensure it has the balance of flavours you want. Adjust with more lime or salt if needed. |

He does cook for us both a fair bit too, and we both work full time so it works out ok. Most of the time he eats what I make, but raw tomato makes him feel quite sick, and then things like corn he just doesn’t like that much. However, I have made a salad a bit like this to go with chicken enchiladas (his fav!), but think it would be enhanced by roasting the corn! 🙂
I have to admit though… my favourite ‘home alone’ meal is cereal! 🙂

Hahahaha I was going to tell you mine is mashed potato and gravy! Real fancy round here. I also know a guy who can only eat raw tomato if it is diced. If it is in wedges or halves he just cannot eat it. So your Mr sounds pretty normal! But corn…. more for you, I guess! xo

I love corn raw.
Ever since that summer I worked on an organic farm and the head farmer would just pull an ear off the plant and eat it, I have loved raw corn.
And now, speaking of songs getting stuck in heads, I have ODB Shimmy Shimmy Ya in mine.
