Ok. This is just one of those dishes that ain’t pretty. Can’t do much about that! But y’all have been putting up with my weird photos since forever with good humour, which is so rad! Honestly, the more this pumpkin and brown rice salad is mushed and homogenous, the better – no dressing needed and no fancy cutlery. Just you, a fork, and a bowl of friendly, non-judgemental healthy salad.
The brown rice is obviously extra-nutritious and helps to fill you up. And the genius (oh I’m so modest) mixing of the sweet pumpkin and salty feta means it coats all the little brown rice grains and covers up that brown rice taste, if you’re not really into it. Meanwhile, I totally know what that’s like and I’ve broken on through to the other side just like Jim Morrison. I don’t know what he was breaking through, but I was breaking the brown rice gross barrier. The view’s awesome from this side!

- 2 cups brown rice (cooked)
- 2 cups roasted pumpkin
- 2 stalks spring/green onion (sliced fine)
- 100g smooth feta
- 2 tablespoons pumpkin seeds/pepitas
- 2 heaped tablespoons pine nuts (toasted)

You know what’s hilarious? I kept making it and thinking I couldn’t blog it because it was so ugly. I take one photo and it looks amazing. Definitely only because my camera is rad, not from any skill on my part!

OMG!!! Last weekend I started making a pile if Christmas decorations & needed something in the TV to keep me company so what did I pop on- GILMORE GIRLS!!! I bloody love that show! I have the last few seasons on DVD so today, as I fix the decirations my stupid dog chewed, I will continue watching it because Loreli is one of the best characters ever & I want to live in Stars Hollow.
I love brown rice, much more than white rice , but the cokking process is what stops me eating it more often. It’s just too fiddly

I totally want to live in Stars Hollow too! So pretty. I love that show, I have all the seasons on DVD and I’ve definitely watched them more than once, haha.
I find brown rice really easy. Pot of water, bring to boil, turn down to low and leave it for ages. Simple and effective!

This looks delicious!!! My brown rice always is so hard but I cook it in a rice cooker maybe i will do the boil method or just play around with different brands! Nearly everything I make that looks like mush is the best tasting! 🙂

I am going to make this with quinoa instead of brown rice for dinner as pretty much all I have is pumpkin, fetta & quinoa in my fridge/pantry and I really, really can’t be bothered going grocery shopping.

Ha I mix it up sometimes and have quinoa too! I usually cook a batch of either at the start of the week and have it cold in salads. Once I even mixed it into little balls and baked them for pumpkin feta quinoa bites. Good stuff!

An easy one to modify & I’d personally be chucking a handful of rocket in for the daily greens quota!
Ps: I went half/half white/brown rice to break on through to the wholegrain side.

Absolutely delicious and so easy to make! Even my kids love it, and if they love it….. that says alot for the dish. The best thing I like about it is that it tastes delicious without having to add any dressing or sauces.✔️✔️✔️
