You know what I suck at? Eating lunch. Like, a proper lunch. Often the girls have rest time from 11.30 onwards, and I use that time to work. So I don’t eat until they get up (sometimes hours later) and by then I’m so hungry I’m about to punch my own self in the face. And then I don’t want anything, because everything takes too long to make and I want it NOW. I’ve talked about it before, but I seem to fail pretty consistently at eating well during the day.
I’ve decided to be a bit more proactive and intentional about the foods that are available in the luncheon period. Not only am I bringing back intentional luncheons, I’m also bringing back the word luncheon.
When the lovely Ruth came to visit, she bought me a present. A wonderful Royal Doulton cup and saucer, and this packet of green tea noodles. I immediately wanted soy and chilli and spring onion and these noodles. So for lunch the next day, I spent some time making something that wasn’t microwaved leftovers. It felt indulgent and nice (isn’t that weird?) but also took less than 10 minutes. I timed it.
I like to think that I’m going to keep up this kind of cooking in the middle of the day bizzo, but we’ll see.

Description
Pressed for time? Forget to eat until it’s too late? Me too, so I’m trying to break the bad-lunch cycle. Starting with this soba noodle stir-fry!
Ingredients
- 1 small carrot, sliced
- 2 mushrooms, sliced
- 1/4 red capsicum, sliced
- 1 kale leaf, shredded
- 2 small cabbage leaves, shredded
- 1 square Soyco Thai Tofu
- Sesame seeds
- Sliced green onion
Instructions
- While the noodles are cooking in a pot of boiling water for three minutes
- Meanwhile, stir-fry all the veg in a little oil in a hot frying pan until crisp-tender
- Drain the noodles, add to the veggies, add a splash of soy sauce and sriracha, top with sesame seeds and sliced green onion. HELLO!

I absolutely love this kind of meal. I don’t work from home so when my boy goes down at 12 I can’t wait to eat my lunch. Usually a salami, salad sandwich. I have some soba noodles and stir fry vegies in the fridge so I am so doing this one today! Thanks for the inspo 🙂

This looks really yummy! I hate lunch breakfast and dinner have defined foods but I never know what to have for lunch, it usually ends up being crackers or toast or leftovers.

I made soba noodle salad for lunch twice but mine had roasted pumpkin in it and I loved it I also like like the new rice+ Aldi has it has black rice basmati rice and quinoa and makes Avery nice salad get some if you can I’m not a sandwich sort of girl either I like soup in the winter and salads and smothies for lunch in the summer xx

Now that I’m not working I always try & make a good lunch. It’s usually a salad & usually consist of whatever I have laying around. Some days it’s a noodle dish. Some days it’s something on sourdough ( my fave is avo & tomato with chilli).If I have stuff stashed in my freezer I’ll make dumplings & I’ve also made Ruth’s gozleme a few times too. As you can see I’m quite boring with my lunch choices but they are mostly pretty healthy & easy to throw together. If I dont eat I become very very angry & not pleasant to be with. Also I have either been growing a human or been the source of food for a human since about the middle of 2012 so I feel guilty if I skip meals….aaaaaaand I love to eat ( I have the hips & arse to prove it!)

I buy pre made wrappers make abig batch of filling ( pork & veg is my fave) & pull them out as I need them- easy peasy hun 🙂

I’m pretty good at doing lunch on time because my son will inevitably remind me that he’s hungry. If I don’t have that alarm system (if he’s at kindy) then I usually won’t remember to eat ’til around 3pm and by then I can’t really be bothered because I know I have to start making dinner soon anyway. Ugh. I pretty much live off left overs for lunch, they bring me so much joy. I haven’t had a microwave in years (always had tiny kitchens) so heating stuff up in the oven can take what feels like an eternity. Not a fan of sandwiches at all. Probably have one once a year if I’m forced to.

Leftovers are my life! I love them. They make lunch so easy. The kids have a great lunch, and I’m left eating 47 crackers because I can’t think of what I want 🙁

I eat a lot of eggs for lunch. Even with a cranky baby I can bash ’em out in mere minutes. Slap some spinach in the pan whilst I’m buttering my toast and it wilts just right. Shweet as. But I do like me a noodle!

YUM! I’ve been craving something ‘noodley’ for ages for lunch.. This might just get a run this week. I pretty much squeeze lunch in either with the toddler or once he’s gone down for his nap. Generally, the last thing I feel like doing is actually preparing something but if I don’t eat, especially while being pregnant, I am a ravenous, angry dragon lady for the afternoon. 3 days outta 5 I make a massive salad either with a sliced boiled egg or poached chicken breast (I poach a couple on a Sunday for weekday lunches for husband, son and I), the other day I have leftovers and some weeks I treat myself to something takeway when the kidlet is at kindy (or I make a ham and cheese toastie.. Not nearly as exciting as an exotic takeaway salad but oh so good).

I totally forget that I can TOAST sandwiches. I don’t know why I forget this, because I love them. I was a total dragon when I was pregnant and hungry, I still am! I used to make a big batch of quinoa or brown rice and put that in my salad. I found having a huge breakfast with lots of protein helped too. Gah, i can never keep up!

Lunch is my favourite meal of the day! I did a poll amongst friends and relatives as to theirs and I was definitely in the minority. I love taking the time to make myself a delicious lunch when I have the time to enjoy it
