It’s a little bit cooler here today thanks to the rain brought on by Cyclone Owen hanging out all up and down the country, and it gave me feeeeeelings about having a bread and butter pudding for dessert. I don’t often ignore these dessert feelings (or any food feelings, actually) and before I knew it, I was slicing and buttering bread for after-dinner Baked Dessert Good Times.
Out came the currants. And then I thought about Christmas and my love for mixed peel, and so they went in. And then I thought of a spiced custard on top given the festivity of this time of year, and then the mic drop hit me: spiced eggnog custard YES THANKS and I was pulling spices down faster than my brain could compute.
I’ve given the plain recipe below, but feel free to add candied peel, currants, sultanas, dried fruits, nuts or whatever floats your festive boat.
Tbh custard isn’t that far off eggnog as it is, but ask me to put brandy in anything and I’m going to be hard-pressed to say no. In fact, I won’t. Eat this spiced eggnog bread and butter pudding and feel the Christmas joy. FEEL THE SPICY CHRISTMAS JOY, OK? And maybe get a little bit tipsy.

Description
Why have bread and butter pudding when you can have creamy, spiced eggnog pudding? Wouldn’t be Christmas without it!
Ingredients
- 6 slices of stale bread, buttered on one side and quartered (feel free to use any kind of leftover bread for this, I sure do – and salted butter is best)
- 3 large free-range or organic eggs
- 200ml whole milk
- 250ml heavy cream
- 75g caster sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground clove (I like a lot so I have a bit more)
- 1/2 teaspoon freshly grated nutmeg, and more for the top
- 1 vanilla bean, scraped (optional but great)
- 1/2 – 3/4 cup brandy or rum (spiced rum would be great here)
Instructions
- Preheat the oven to 180C
- Place the buttered triangles of bread in a shallow dish, overlapping slightly.
- In a bowl or jug mix together the eggs, milk, cream, sugar, spices and vanilla
- Pour the custard mixture over the bread and leave to sit 10 or 15 minutes for the custard to start soaking into the bread
- Bake 20-30 minutes until puffed and golden and cooked all the way through.
