It’s always this time of year I turn to vegetarian soups even more than usual. I love a hot bowl of something savoury eaten on the couch with gay abandon. Add a wedge of sourdough and proper butter and I’m happier than a two-year-old at a live Peppa Pig show.
These are my go-tos year round but my extra favourites in winter. The Minestrone every couple of weeks and always a stash in the freezer, the broccoli cheese when flaccid broccoli takes over the fridge (let’s be honest that’s pretty regularly), and the Thai soup for one just about every day. Working on my wonton soup, I’m endlessly fiddling with that!
Vegetarian Soup Recipes
Red Lentil Veggie Soup with Roasted Potato Croutons
This is such a “chuck whatever you’ve got in the pot” kind of soup with the goodness of added lentils. Love the chunky feta croutons alongside the crispy-on-the-outside, soft-on-the-inside potato ones.

Minted Pea Soup with Goat Cheese and Watercress
I don’t know what it is with me and cheese and soup, but there it is! You can leave out the watercress but I love it’s pepperiness and I have a small pot of it growing so it’s no big deal. Good also topped with rocket.

Simple Minestrone
Where would I be without this bad boy? It gets trotted out for every occasion and especially when I feel under the weather. I’d say the parmesan-style cheese rind is optional but if it’s up to me it’s not! I freeze all my hard cheese rinds and pop one in every time. It really does make such a difference to the flavour, especially if you’re just using water or veggie stock.

Cheddar Veggie Soup
YOU HAVE GOT TO MAKE THIS. Ok so it’s just a fridge cleanout veggie soup but with the addition of a cheesy bechamel. It’s the best way to kick your regular ole veg soup up a notch. I almost can’t make a normal veggie soup now.

Potato and Cabbage Soup with a Jalapeno Lime Twist
I know, it sounds REALLY weird. But we tried it because we were drowning in potatoes and cabbages in our weekly organics boxes and I looked everywhere to find something unusual to do with it (I mean I love colcannon but even I have my limits). The soup part is sweet and spicy, and the sour cream-avocado-lime top makes it incredible. One of my favourites now.

Vegetarian/Vegan Thai Coconut Soup for One
I usually have all of these elements on hand and it’s such a breeze to make. It’s actually better made in small batches, but you can definitely double or quadruple, whatever you need.

Hoisin-Tofu Soup with Rice
I love this for when I need a good hit of chilli, dark broth, and rice… so all the time, haha! Sometimes I put silken tofu in too, and sometimes I do a combination soup of noodles and wontons. It’s pretty versatile.

Roasted Pumpkin Soup
STANDARD in this house. Roasting the potato really bumps up the flavour, I love the caramelised sweetness of the edges alllllll blended in. The best.

Pumpkin and Ginger Soup with Coconut and Chili
For when you want a little hit of something different. Works really well as a thai-style situation – just don’t use butternut pumpkin!

Creamy Corn Chowder
I’ve convinced many a non-veg with this one. If you only make one soup in this list, make it this corn chowder! I mean it.

Spiced Lentil Soup
Ugly photo, but verrrrrry good soup. Really warming and spicy and full of flavour. Just remember to take out the cardamom pods!

Cauliflower and Leek Soup
A creamy bowl of sweet, sweet deliciousness. I’ve also been known to chuck a huge wodge of blue cheese in here. I make this on the regular.

Broccoli Cheese Soup
Such an American classic but I was a bit of a newcomer to it. It’s so simple, but the rich flavour belies its few ingredients. It’s the cheesy bechamel – it gets me every time. I’m going to make some this week, for real. I’ve got the best loaf of sourdough juuuuuust waiting.

It’s a big fat yes, please to any of these, but you can keep the one with tofu (only because it’s my food nemesis.) That cheesy veggie number looks positively soup-er!

So my cleanse was great and so tasty but on day 3 of ration challenge and am hating all the rice… not because it’s bland because it’s filling and hurting my tummy that has just had weeks of glorious veggies and fruit!

what a beautiful collection of soups – I probably make a cross between a minestrone and a lentil soup most – now I think I need one tonight. One of my other favourite soups is an Asian style corn and tempen soup and I love pumpkin too. And I am going to have to try your cheddar vegie soup – I have done this with cauliflower with dairy and vegan cheese sauces but now I need to try it with lots of veg.
