The weekend just screams “big breakfast”, does it not? All that time to devote to something with a little more thought than toast or cereal. I like to do a pretty substantial breakfast or brunch on Saturdays and Sundays (here is my favourite), and I also like to do something a little out of our ordinary every now and then.
Enter home fries.
It’s probably pretty difficult to find someone who isn’t into fried potatoes and garlic. Salty, hot, crispy on the outside, soft and fluffy in the middle – the stuff dreams are made of, right? Unless you use a hard, waxy potato like I did here, then they won’t be so fluffy. But a good Sebago should sort you out! Mine was still delicious, but just a bit firmer.
Anyhow, I like to peel and dice 1-2 potatoes per person (I didn’t peel these ones as they were organic and very clean. Still gave them a good scrub though! The skin adds an extra element of flavour, not to mention vitamins and minerals. You decide!) and steam them for about 5-6 minutes. Then I throw them into a fryingpan over heat with some hot oil inside and leave to cook until they start going golden, about five minutes or so. Then I flip them occasionally so each side of the potato has a chance to sit in the hot oil for a while and develop a crispy, golden crust. I add my garlic about 5 minutes before serving, and turn the heat down so it doesn’t burn. Maybe 2-3 cloves, depending. and then I salt the shit out of them.
Sometimes I also like to put in a little onion and herbs, or paprika or something else fun.
I often pop these alongside the other goodies on my breakfast plate, and sometimes they’re nice on their own with a couple of fried eggs. Sauce optional.

Try royal blue potatoes. They make the crunchiest, fluffiest roast spuds so I bet they’d be just as good as home fries 🙂

They look alright to me I love potatoes I make these but add a bit of rosemary to the pan and they are yum.I don’t really cook brunch but I should I suppose.
